Clamenza's Spagetti Sauce

Toni and I love the Godfather movies. And if you are a fan of the movies as well, you will recognize this recipe.

Clamenza's Spagetti Sauce

4 T. olive oil
8-10 cloves of garlic, peeled & chopped
48 oz. crushed tomatoes
24 oz. tomato paste
1 lb. Italian sausage, chopped
1 lb. Italian meatballs, thawed
1/2 C. chianti (red wine)
1/4 C. sugar

This recipe was adapted from the one given to young Michael Corleone, by Clamenza, in "The Godfather." I played with the ingredients and the quantities several times until I got it down. From the movie:

"Come over here kid, learn something. You never know, you might have to cook for twenty guys someday. You see, you start out with a little bit of oil. And then you fry some garlic. Then you t'row in some tomatoes, some tomato paste, you fry it, you make sure it doesn't stick. You got it to a boil you shove in all your sausage and your meatballs...eh?...add a little bit of wine...and some sugar...and that's my trick."

TIP: The meats add all the flavor to this sauce, so don't skimp on them. You can use the frozen, generic italian sausages and meatballs at the supermarket, but for a stellar sauce you should go to an Italian meat market and ask the butcher for his favorite.
